The Italian farm is located in a simple and unchanged territory of the Sicilian hinterland where various legume essences (sul, clover, etc.) and grasses dominate the grazing landscape.
The farm covers 100 hectares of pastures and arable land with about 700 sheep. Environmentally friendly breeders and farmers, since 2000 the company is certified organic.
The sheep reared in a semi-wild state are fed in the pasture with the integration of hay and feed produced on the farm. Nutrition is considered strategic for the entire production process, in fact it is the quality of the latter that produces the quality of the milk. The mountain pastures and hay contain herbs and essences unknown in other places and transfer exclusive aromas to the milk and therefore to the cheese.
For generations, the passion for animals has characterized the entrepreneurs' modus vivendi.
The goal is to improve the dairy herd by selecting the products that best lend themselves to combining rusticity and adaptability to the environment with the quality of milk and production. Respect for animal health and welfare complies with legal requirements, sometimes even with more stringent rules.
The company's main product is fresh white and / or flavored pecorino foam (black pepper, chilli, rocket, dried tomatoes, pistachio, olives, oregano)
The ingredients used are: thermised sheep's milk from two / three milks, rennet in lamb paste, lactic ferments, salt.
In the flavored pecorino,pistachio, black pepper, chilli, rocket, olives, oregano, dried tomatoes are in addition to the basic ingredients.
The whole production process takes place manually and following the artisanal method with salting in brine.
The pecorino forms are cylindrical with a weight of 1.5 kg, the rind is wrinkled and thin, straw yellow in color. The paste, which is also straw yellow in color, is compact and has a sweet flavor.
The company is currently present on the national and German market and is interested in increasing its presence on the international market through collaboration with parties interested in distribution services contracts.
The partner will introduce the company's products in the host country in accordance with the distribution agreement. It is also advisable to have warehouses for the storage of the product, as well as a logistics network for the delivery to the consumers.
